Couscous. So good they had to name it twice.

Well hello again! It's another super awesome Sunday for me!  Just organizing, cooking, jammin, relaxing and enjoying the RAIN.  Figured I'd share a yummy recipe with ya. 

This is what I made for lunch today! 
If you like Couscous, you'll LOVE this...Well, maybe.  They're your taste buds not mine, but... I mean, I was surprisingly impressed with my creation and so was Gil. She's a tough critic.  Since we just moved into our new apartment, we haven't had time to get a large food collection going.  I made this recipe up from what I found in the ice box.
TIP : If you buy healthy food, you'll cook with healthy food. ;)

First, I gathered all the stuff I thought would be good together. 
I had about 1cup of Couscous and 1 3/4 cups veggie broth. I used a cup of chopped kale steamed, 1 1/2 cups of cauliflower1/2 red onion sliced, half cup of cooked frozen peas and 2 1/2 tablespoons of  oil.   I would have preferred olive oil but I only had canola oil so I used that.  Tony's was my salt and pepper because we don't have that yet either yet.  It all worked out. :)

What ya do is heat the oil in a pan on medium heat for a bit then add the onion.  When that is all warm and fragrant, about 2 mins, add your couscous.  Stir it around in there till its golden brown like my pic.  About 3-5 mins.  Oh yeah... and before you do any of that, you need to be bringing your veggie broth to a boil in a medium to large sauce pan. Heh. 
OK, when your couscous looks like the pic, add it slowly to your now boiling broth. Turn the heat down to med and let it simmer covered for 3 mins then add cauliflower. Keep it covered and stir it every now and then.  After  about 6-7 mins, poke your cauliflower with a fork or in my case a chop stick to see if it's done (we don't have forks yet). It will be soft if it's done. It should be done, if  its not, cook it another minute.

The last thing you do is take it off the heat and mix your steamed kale and cooked frozen peas to the concoction. Season to taste! 
Have fun with it when you make it!  Change the veggies up and add rosemary or parsley.  Make it your own. Next time, I'll probably add red pepper flakes so I don't have to share with Gil. HA!
