This Tickles my Fancy

So I like to cook. Sometimes I really impress myself with how well things turn out. Other times, mmmm, not so much. Here are some pictures of what I have made pretty recently. One of my New Years resolutions is to cook more at home! I think I'm off to a good start.


Salmon and Brussels Sprouts

I just popped all this in the oven! It's really easy to make. Toss some brussels sprouts in olive oil, salt and pepper and lemon juice and roast in the oven for 45 mins at 350. I had Whole Foods season the salmon with lemon and thyme. I baked it for 18 mins at 400 and then put it on top of my yummy Brussels and ate it! YUM!


Carrots and Brussels
I did these sprouts pretty much the same way I made them with the Salmon. These didn't turn out as good because I didn't cook them long enough and I didn't use enough oil. You really have to give them a good coat of oil and roast them till the outside leaves are crispy and blackened.... Roast them for the whole 45 minutes. I jumped the gun. They look good tho!


Greek Yogurt with Raspberries and Banannas

That's all it is! Plain, fat free Greek yogurt and fruit. I like to make it fun to eat by layering the two. First put a couple raspberries at the bottom of the bowl then a dollop of your yogurt, spread, then a few more raspberries and another dollop! Decorate the top with some sliced bananas and what ever else that may tickle your fancy. OMG it's so good!


Rosemary Pork Chop
Gil and I made these. I wouldn't pick pork out but Gilly really wanted it one night so we made some. We put a little canola oil on a pan and searded them for 4 mins on each side. I'm always worried that I'm either going to under cook food and get sick or that I'm going to over cook it and ruin it. So temping it is my no fail solution. They should be at 165 ish. Either that, or I make Gil eat it first. ;) They were perfect! I like to dip mine in ketchup.......I know.


Yay for cooking!!! They only part I don't like is cleaning up after myself. Where's Rosey!<--That link is awesome. ;) Happy New Year!!!!!
